Apple Salad


apples
raisins
chopped pecans
whipped cream or cool whip

Peel and chop apples. Stir in raisins and pecans. You can also add bananas and mandarin oranges (drained) if you like. Whip cream and sweeten with sugar and vanilla flavoring. Or you can use cool whip. Stir in enough to make the salad the consistency you like.

Baked Apples

 

Peel, core & quarter apples.  Place in a baking dish.  Pour a small amount of Lemon juice

over the top.  Sprinkle with brown sugar and granulated sugar and cinnamon.  Bake

250 degrees for 2 hours (while your Sunday dinner is cooking).

 

For Sugar Free Baked Apples

substitute the sugars for Sugar Twin and Equal.

Baked Chicken with Potatoes


1 chicken, cut up and skinned
potatoes, peeled
carrots, peeled
1 can condensed cream of chicken soup
1 onion, peeled and quartered
salt
pepper
lemon pepper
parsley

Cut potatoes as desired. (I usually half or quarter them). Cut up carrots, in slices or strips. Place chicken, and vegetables in greased baking dish. Spoon soup over the top. Sprinkle with seasonings. Cover and bake 350 degrees 1 1/2 hours.

Baked Pork Loin 

¼ c. soy sauce

1 T. Dale Seasoning

1 T. Worcestershire sauce

3 T. margarine, melted

3 T. brown sugar

3 T. cooking sherry

Mix all ingredients except pork loin together.  Pour over pork loin in a large Ziploc bag. 

Marinate overnight.  Brown loin in a small amount of margarine in frying pan.  Place loin

and the marinade ingredients in baking dish.  Bake 350 degrees 1 hour.

Brown Rice

2 cups long grain rice
2 cans beef consumme
2 cans french onion soup
1/4 cup margarine -- melted

Stir together all ingredients. Bake 350 degrees for 1 hour.

Bing Cherry Congealed Salad

 

 

1 can bing cherries, drained, liquid reserved

1 can mandarin oranges, drained, liquid reserved

1 apple, peeled, cored & chopped

½ c. chopped pecans

1 large package cherry or raspberry jello

1 - 8 oz. pkg. cream cheese

1 can coke

 

Measure liquid from fruit to measure 1 cup.  Heat.  Stir in jello.  Beat in cream cheese.  Stir in fruit & pecans.  Stir in coke.  Pour into mold or bowl.  Set.

Caramel Dip with Fruit

 

 

7 oz. caramels, unwrapped

8 oz. cream cheese

1 T. lemon juice

½ tsp. vanilla

milk

 

 

Melt caramels in microwave.  Beat in

cream cheese.  Beat in juice and vanilla.  Stir in enough milk to make a creamy mixture.

 

Serve with sliced apples, grapes and

other fruit.

Congealed Strawberry Salad

 

1 large package strawberry jello

2 c. boiling water

1 c. cold tap water

½ c. pecans, chopped

1 c. strawberries, diced

3 oz. cream cheese, softened

½ c. sour cream

¼ c. sugar

 

Dissolve jello in boiling water.  Stir in tap water.  Let set in refrigerator until almost congealed.  Stir in berries and pecans.  Mix together cream cheese, sour cream and sugar.  Swirl into jello mixture.  Refrigerate until set.

Cranberry Salad

1 large cherry or strawberry jello
1 cup boiling water
1 small can mandarin oranges, chopped -- not drained
1 cup chopped pecans
1 can whole cranberry sauce
1 can coke

Dissolve jello in water. Add other ingredients. Chill until set. If you like, make a topping of: 4 oz. cream cheese, softened, 1/4 c. sour cream & 2 T. sugar and spread on top.

Fried Apples

apples
brown sugar
white sugar
cinnamon
margarine
lemon juice

Fry apples in margarine. Add about 2 Tablespoons lemon juice. Sprinkle with cinnamon and a mixture of the sugars. Cover and cook until tender.

Fried Rice

prepared rice
seasonings
oil

Pour small amount of oil in frying pan. Stir in rice. Add seasonings of your choice. Brown. Add a bit of water if needed. (I like Saffron Flavored Rice, and other seasoned spices) You can add vegetables to this if you like.

Grilled Barbecued Pork Chops

Get grill hot. Grill pork chops. After you turn then over, season to your liking, then put some barbecue sauce on each chop. Remove from heat. I usually take mine off before they're quite done and place them in a baking dish and cover with foil. Then place them in the oven on low heat until everything else is ready. I make a barbecue sauce using ketchup, mustard, brown sugar, seasonings, ground red pepper and sweet pickle juice. I make it kind of thick.

Grilled Marinated Roast

Roast
9 Tablespoons soy sauce
1 Tablespoon sugar
2 Tablespoons margarine, melted
1 Tablespoon Dale seasoning
1 Tablespoon Worcestershire sauce
1 Tablespoon sesame seeds

Mix marinade ingredients. Place roast in Ziploc bag. Pour marinade over roast. Seal and marinate overnight. Grill over hot coals, or on gas grill 45 min. - 1 hour, turning as needed.

Meatloaf

  

2 eggs

1/2 c. chicken broth (or 1 T. granule bouillon mixed with water)

diced celery

diced bell pepper & onion (optional)

2 tsp. salt

1 T. dried parsley

sprinkle of coarse ground pepper

sprinkle of garlic powder

sprinkle of  lemon pepper

1 slice bread, torn into small pieces

2 pounds lean ground beef

grated cheese

ketchup or barbecue sauce

 

Mix eggs.  Stir in broth, bread,  vegetables and seasonings.

Stir in beef.  Press 1/2 of the meat mixture into a loaf pan.  Sprinkle with

grated cheese and another sprinkle of parsley.   Press remaining meat

mixture on top.  Bake, uncovered, at 350 degrees, for 45 minutes.

Drain grease.  Bake for another 30 minutes.  Spread some ketchup

or barbecue sauce on top.  Bake another few minutes.  Place loaf on

a platter.  Slice and serve.

Noodle & Chicken Concoction


noodles
3 chicken breasts
1 can cream of chicken soup
1 soup can of water
1/2 cup seasoned rice
seasonings

Cook noodles. You can use a package of egg noodles, or make your own. Don't cook all the way! Drain. Cut chicken in bite sizes. Brown in a small amount of oil.  Add seasonings of your choice. I used basil, chicken seasoning & lemon pepper. Stir in rice and water. Cover and simmer a few minutes. Stir into noodles, along with the soup. Pour mixture into buttered casserole dish. Top with Ritz cracker crumbs if you like. Bake 350 degrees 30 minutes.

Noodles & Tomatoes


2 eggs
1/2 teaspoon salt
all-purpose flour

Beat eggs with fork. Stir in salt. Add enough flour to make a very stiff dough. Roll dough out very thin on a floured surface. Roll dough up and cut with a knife in 1/2" strips. Unroll each strip and place on a towel of paper towels. Allow to dry thoroughly. Cook noodles in salted boiling water 10-15 minutes. Drain and rinse. Pour 1 quart tomatoes over this and 2 Tablespoons margarine. Season with lemon pepper and black pepper.

Pasta Salad

 

 

1 small package rotini pasta

grated carrots

finely chopped broccoli

1 c. frozen peas

bacon bits

salt, pepper, lemon pepper, parsley

Miracle Whip salad dressing

little bit of sugar

a squirt of Ranch dressing

a squirt of Raspberry Vinaigrette dressing

 

Cook pasta.  Drain and allow to cool.  Stir in

vegetables and bacon.  Add water ever seasonings you like – to taste.  Stir in dressings along with sugar.  Taste and add more dressings to suit you.

Porcupine Meatballs

 

1 lb. ground beef

¼ c. uncooked rice

salt

pepper

other spices

1 pint tomatoes

 

Mix beef with rice and spices.  Shape into balls.   Place in greased baking dish.  Cover with tomatoes.  Cover and bake 350 degrees about an hour.

Pork Chop Casserole


potatoes -- peeled & sliced
onions -- peeled & sliced
frozen or canned corn
pint of tomatoes
seasonings
pork chops

Butter baking dish. Alternate sliced potatoes & sliced onions & corn in baking dish (iIf you use canned corn, drain first). Top with pork chops. Pour tomatoes over the chops. Sprinkle with salt & pepper and other seasonings to your liking. Bake 350 degrees about 1 1/2 hours.

Pork Roast



Brown roast in a small amount of oil in a Dutch oven. Pour a little bit of water over roast, cover and cook 30-45 minutes on top of stove. Pour a little bit more water over roast. Place in oven and bake 225 degrees for 3 hours. Remove meat from pan. Make gravy with the drippings, using cornstarch, water and seasonings.

Roast Beef & Potatoes


1 Beef Roast
potatoes
carrots
onions
water
cornstarch

Brown roast in a small amount of oil in a cast iron Dutch Oven. Pour 1 cup water over the meat and allow to cook, turning occasionally, for about 30 - 45 minutes. Add another 1/2 cup water, or more if needed to replace that which evaporated. Peel potatoes. Slice in half if necessary for them to all fit in the Dutch Oven. Add sliced onion and carrots if desired. Season with salt and pepper. Cover and place in the oven. Bake 275-300 degrees for 2 hours. Remove vegetables and roast from pan. Stir together about 1/4 cup cornstarch and 1/2 cup water. Pour this mixture into juice from the roast. Heat on the stove until thickened. You may need to add a little bit more water & cornstarch to make as much gravy as you want, or a thicker consistency.

Seasoned Pork Chops


boneless pork chops
lemon pepper seasoning
garlic powder
ground cumin
basil
parsley
salt
pepper

Sprinkle seasonings over pork chops. Place on an electric grill. Remove from grill & pour on some barbecue sauce if you like.

Sloppy Joes

 

 

3 lb. ground beef

1 large can Manwich sauce

16 oz. spaghetti sauce

 

 

Brown beef.  Drain grease.  Stir in sauces.  Heat thoroughly.  Serve on buns.


 

Stuffed Pork Loin

 

 

Pork loin

Beef consommé

1 stick margarine

coarse black pepper

 

4 slices raisin bread

1 apple

onion flakes

celery flakes

parsley

  

Cut slit through loin lengthwise, not cutting all the way through.

Place loin in gallon Ziploc bag.  Pour half a can of beef consommé and ½ stick melted margarine over loin.  Sprinkle in some pepper.  Seal bag.  Let marinade overnight.

(Cover the remaining consommé and put in the refrigerator)

 

Tear bread into pieces.  Peel, core and chop apple.  Mix bread and apple with

onion & celery flakes and parsley.  Stir in the remaining beef consommé and melted margarine.  Add other seasonings of your choice.  Open up the loin.  Stuff.  Tie the loin or use toothpicks to secure.  Place in greased baking pan.  Sprinkle with some coarse pepper and parsley flakes.  Bake 350 degrees 1 hour, uncovered.  Cover with foil and bake another 30 minutes.

Sunday Pork Chops

Worcestershire sauce

Brown pork chops well in oil. Sprinkle with seasonings and sauce. Put the lid on the pan and let them cook awhile. ( I use a big pan that can be used on top of the stove as well as in the oven.) Place the pan in the oven and bake 200 degrees. I put it in the oven just before we leave for church. They are nice and tender when it's time to eat!

Sweet Potato Cups

 

4 med. sweet potatoes

¼ c. margarine

¼  c. brown sugar

2 T. c. milk

 

¼  c. margarine

½ c. brown sugar

½ c. chopped pecans

 

Boil potatoes, in their skins, in salted water.  When done,

drain and let potatoes cool.  Peel.  Mash potatoes.

Add other ingredients.  Spoon mixture into individual

baking cups in muffin pan.  Mix other ingredients.

Sprinkle over sweet potato mixture.   Bake 350 degrees 30 min.

Taco Soup

 

1 lb. ground beef

1 16oz. can kidney beans

1 can rotel tomatoes

1 pkg. taco seasoning

1 qt. canned tomatoes

1 pkg. Hidden Valley Ranch Dressing

1 small can corn (drained), optional

chopped chili peppers, optional

 

Brown and drain ground beef.  Add other ingredients.  Heat in crock pot. 

 

Serve with grated cheese, sour cream, fritos, lettuce and tomatoes.
