Chicken & Beef Stuffed Manicotti
2 eggs
pinch of salt
flour
1 T. vegetable, canola or olive oil
mixture of cheeses (about 4-6 oz.)
herbs & spices
1 egg
Mix 2 eggs, a pinch of salt and oil. Stir in enough flour to make a stiff dough.
Place on floured surface. Knead 10 times. Roll dough out very thin. Cut in 2 1/2 inch squares.
Place mixture of cheeses in a blender and chop well. (You may want to use a mixture of cheddar, mozzarella,
Mexican cheeses, parmesan, or whatever you prefer for the taste you want.) Sprinkle in herbs & spices to acquire
the flavor you are looking for. (If serving as an Italian side dish, you may want to use some Italian seasoning, basil & parsley.
If serving as a Mexican side dish you can add cumin, paprika, chili powder, etc.)
Stir in egg. Place about 1/2 teaspoon of cheese mixture into each pasta square. Fold corner to corner and press edges.
Wrap the tortellini, sealing the other two corners together. Fold the other section over to form the tortellini.
Place on cookie sheet and place in the refrigerator for 30 minutes.
Chicken & Beef Stuffed
Manicotti
small package chicken tenders
1 pound ground beef
1 quart spaghetti sauce
1/2 cup sour cream
3 ounces cream cheese
8 ounces cheddar cheese
8 ounces mozzarella cheese
14 manicotti shells
Cut chicken into small pieces. Brown in a small amount of oil in pan. Add ground
beef and continue cooking until done. Drain grease. Stir in 2 cups spaghetti
sauce, cream cheese and sour cream. Place in refrigerator to cool for a few
minutes. Stir in half of the cheddar & mozzarella cheese. Cook manicotti shells
in salted boiling water until almost tender. Drain and cool. Pour 1 cup
spaghetti sauce in baking dish. Stuff manicotti shells with meat mixture. Pour
remaining spaghetti sauce over the shells. Sprinkle remaining cheese over the
top. Bake 350 degrees 30-45 minutes.

Chicken Rigatoni
2 skinless boneless chicken breasts, -- cut in strips
1 small package pepperoni
1 teaspoon minced garlic
1 16 ounce jar spaghetti sauce
1 box rigatoni
8 ounces grated cheddar cheese
Brown chicken pieces in small amount of oil in frying pan. Cut each pepperoni in half and add to chicken along with garlic. Cook a few minutes longer. Cook rigatoni in salted boiling water for 10 minutes. Drain. Stir in chicken and pepperoni along with spaghetti sauce. Add any spices that you like - italian seasoning, parsley, garlic powder, etc. Stir in cheese, reserving a little bit for the top. Sprinkle the remaining cheese on top. Bake 350 degrees 30 minutes.

Italian Chicken
8 chicken breasts without skin
15 ounces spaghetti sauce
4 ounces mozzarella cheese
Place chicken breasts in greased baking dish. Pour sauce over the top. Cover and
bake 350 degrees 1 1/2 hours. Uncover. Sprinkle cheese on top. Bake 15 minutes
longer.

Lasagna
1 package lasagna noodles
2 pounds ground beef
1 quart spaghetti sauce
4 ounces mozzarella cheese -- grated
4 ounces cheddar cheese -- garted
Brown hamburger meat. Drain. Stir in spaghetti sauce. Layer noodles, sauce and cheeses. Cover tightly. Bake 350 degrees for 1 hour. Uncover and bake 15 minutes longer.
NOTES : You can put the noodles in uncooked. If you use cooked noodles, decrease the baking time. If you want to put in ricotta or cottage cheese that's fine.

Lasagna with Chicken
lasagna noodles
1 lb. hamburger meat
spaghetti sauce
8 boneless skinless chicken breasts
mozzarella cheese
Cook noodles. Drain. Brown hamburger meat. Stir in spaghetti sauce. (I used 3 pints) Cook chicken breasts in skillet or on electric grill. Place a chicken breast on a noodle. Place a slice of cheese on top and wrap the chicken in the lasagna noodle. Layer the remaining noodles and sauce. Place wrapped chicken on top. Cover with grated cheese. Bake 350 degrees about 45 minutes.

Pizza
French Bread Dough
1 16 ounce jar pizza sauce
pepperoni sausage
ground beef, cooked and drained
onions, sliced
bell pepper strips
8 ounces grated cheddar cheese
8 ounces grated mozzarella cheese
whatever else you'd like for toppings
Use the French Bread Recipe for your dough. Divide dough in half. Press onto greased pizza pans. Hint: after placing dough on pan, sprinkle a little bit of flour on the dough, being careful not to get flour on the pan. The dough will press out a lot better. Top each crust with spaghetti/pizza sauce. Put on other toppings. Sprinkle with the cheeses. Bake 400 degrees about 25-30 minutes.

Pizza Stuff
Follow the same for pizza, except, roll dough into a big rectangle (just a little bit longer than your baking pan, but quite a bit wider. Put all the pizza toppings in the center of the dough. Fold both sides over filling, then pull over the ends to seal. Bake 400 degrees for 30 minutes. Melt ¼ c. margarine and add seasonings. Pour over pizza stuff and sprinkle with a little bit of grated cheese. Bake 5 minutes longer.
