Dried Basil


fresh basil 

Wash basil. Place on a towel and pat to remove excess moisture. Place basil on papers towels in the microwave. Microwave for 2 minutes. Move the basil around. Microwave for 2 more minutes - and continue the same process until basil is dry. Remove basil from microwave and let it set for several minutes to cool and to allow any moisture to evaporate. Roll up the paper towels. With your hand or a rolling pin crush the basil. Put the basil in ziploc bags or in a jar. Use it in soups, stews, Italian dishes, potato salad, Spanish/Mexican dishes and whatever else you like.

Southwest Seasoning


1/4 cup chili powder
1/4 cup onion powder
2 Tablespoons ground cumin
2 Tablespoons oregano
2 Tablespoons ground coriander
2 Tablespoons dried basil
2 Tablespoons garlic powder
1/4 teaspoon ground red pepper

Mix all ingredients. Store in an airtight container. Use as seasoning for meats and vegetables,

 Spanish rice, stir fries, fajitas, etc.

Taco Seasoning


3/4 cup dried minced onion
3 Tablespoons salt
1/4 cup chili powder
1 Tablespoon oregano
2 Tablespoons cornstarch
2 Tablespoons crushed red pepper
1/2 teaspoon ground red pepper
2 Tablespoons garlic powder
2 Tablespoons ground cumin

Mix all together. Place in airtight container. Use it to sprinkle in Mexican dishes. For tacos, use 2-3 Tablespoons mixed with 1/2 cup water and 1 lb. ground beef, cooked and drained.
