Applesauce Cookies


1 cup warm unsweetened applesauce
1/4 cup margarine
1 cup sugar
1/2 cup raisins
2 1/2 cups flour
1 teaspoon soda
1/2 teaspoon salt
1/2 teaspoon cloves & allspice
1 teaspoon cinnamon
1/2 cup pecans -- chopped, optional

Place applesauce, margarine and raisins in microwave. Heat for 1 minute. Stir in sugar and soda. Stir in remaining ingredients. Drop by spoonfuls onto greased baking sheets. Bake 400 degrees 12-15 minutes.

Chocolate Chip Meringue Cookies


1 egg white
1/8 teaspoon salt
1/3 cup sugar
1/2 teaspoon vanilla
1/4 cup chocolate chips

Beat egg white until still. Beat in salt, sugar and vanilla. Stir in chocolate chips. Drop by spoonfuls onto cookie sheet lined with parchment paper or brown paper. Bake 300 degrees about 25 minutes. Makes enough for 2 little grandkids.

Cinnamon Sugar Crispies


2 cups all-purpose flour
1/4 teaspoon salt
1/2 cup sugar
1 egg
1/4 teaspoon soda
1 cup margarine
1/4 cup sugar
1/2 teaspoon cinnamon

Cream margarine and 1/2 c. sugar. Beat in egg, then flour, salt and soda. Shape into 1" balls. Roll in a mixture of 1/4 c. sugar and cinnamon. Place on greased baking sheets. Place a pecan half on each cookie, if you like. Bake 350 degrees for 10-12 minutes. Makes 3 dozen.

Lemonade Cookies


1 cup margarine -- softened
1 cup sugar
2 eggs
3 cups flour
1 teaspoon soda water
1 6 oz. can frozen lemonade concentrate
1/2 teaspoon almond flavoring
1/2 teaspoon vanilla flavoring
additional sugar

Cream margarine and sugar. Add eggs. Stir in dry ingredients alternately with 1/3 c. lemonade. Add flavorings. Drop by rounded spoonfuls onto ungreased baking sheet. Bake 400 degrees 8-10 minutes. Remove to wire racks. Pour remaining lemonade in a small bowl. Dip the tops of the cookies into lemonade and sprinkle with sugar.

Snickerdoodles


3/4 cup sugar
1/2 c. margarine -- softened
1 egg
1/4 teaspoon salt
1/4 teaspoon soda
1/4 teaspoon cream of tartar
1 1/2 cups all-purpose flour
1/2 teaspoon vanilla
2 Tablespoons sugar
2 teaspoons cinnamon

Cream 3/4 c. sugar and margarine. Beat in egg and vanilla. Stir in flour, salt, soda and cream of tartar. Shape into 1" balls. Roll in a mixture of the 2 Tablespoons sugar and cinnamon. Place balls 2" apart on greased baking sheets. Bake 350 degrees 8-10 minutes.
