Baked Cheese Pies

 

 

biscuit dough

grated cheese

 

 

Roll dough out thin.  Using a bowl or big cup, cut circles in the dough.  Place a small amount of cheese on half of each circle.  Fold over and seal edges with a fork by dipping fork in flour and pressing edges together.  Turn the little pie over and press the edge again.  Place on baking sheet.  Bake 400 degrees for about 10 min.

Biscuits


2 cups all-purpose flour
4 teaspoons baking powder
1/4 teaspoon salt
1 1/2 teaspoons cream of tartar
2 teaspoons sugar
1/3 cup margarine
2/3 cup milk

Cut margarine into dry ingredients. Stir in milk. Turn out on floured surface. Knead 10 times. Flatten out to ½" thickness. Cut with biscuit cutter. Place on baking pan. Bake 400 degrees 10-12 minutes.

Blueberry Muffins


1/4 cup margarine -- softened
1/3 cup sugar
1 egg
2 1/4 cups flour
4 teaspoons baking powder
1/2 teaspoon salt
1 cup milk
1/2 teaspoon almond flavoring
1 1/2 cups fresh blueberries
TOPPING
1/2 cup sugar
1/4 cup flour
1/4 cup margarine -- softened
1/2 teaspoon cinnamon

Beat sugar and margarine. Add egg. Add dry ingredients alternately with milk. Stir in flavoring and berries. Spoon batter into greased muffin tins, filling 2/3 full. Sprinkle with topping. Bake 375 degrees 25 minutes.

Bread Sticks



Use the recipe for French Bread. When you roll the dough out, roll it a bit thinner. Cut in strips. Twist each strip and place on greased baking sheet. Bake 400 degrees about 10 minutes. Drizzle with margarine & spices and sprinkle with cheese. Bake 5 minutes longer.

Butterhorns


1 package yeast
1/4 cup warm water
1 cup milk
1 teaspoon salt
1/2 cup shortening
1/2 cup sugar
2 eggs
4 1/2 cups all purpose flour
1/4 cup margarine, softened

Dissolve yeast in warm water. Combine milk, salt, shortening and sugar. Microwave 1 1/2-2 minutes. Stir in 1 1/2 cups flour. Stir in eggs. Stir in yeast mixture. Add enough remaining flour to make a soft sticky dough. Turn dough out on floured surface. Knead about 5 minutes. Place in greased bowl. Cover with towel. Let rise until doubled in size. Divide dough in half. Roll each into a circle and spread with softened margarine. Cut each circle into 12 wedges. Roll each wedge, beginning with the wide side. Place on greased baking sheet, with the point down. Cover and let rise until doubled. Bake 400 degrees for about 15 minutes. Brush tops with softened margarine, if desired.

Cheese Garlic Biscuits



biscuit dough
4 ounces grated cheddar cheese
1/4 cup margarine, melted
parsley
garlic powder
Italian seasoning, or basil

Mix up biscuit dough. Stir in cheese. Do not knead. Drop by spoonfuls onto baking sheet. Bake about 8 minutes. Mix margarine with herbs and garlic powder. Spoon over biscuits. Cook a few minutes more until done.

Cinnamon Rolls


1 cup milk
1/2 cup shortening
1 teaspoon salt
1/4 cup warm water
1 package yeast
1/4 cup sugar
2 eggs
plain flour
2 tablespoons light corn syrup
1/4 cup margarine
1/2 cup brown sugar
1/2 cup margarine -- softened
brown sugar
white sugar
cinnamon

You can use this recipe or "Out of this World Rolls" Recipe.

Dissolve yeast in warm water. Set aside and allow to soften for a few minutes. Heat milk and shortening in a mixing bowl in the microwave until shortening is almost melted. Stir in about 1 cup flour, 1/4 c. sugar and salt. Stir in eggs and mix well. Stir in dissolved yeast. Add enough flour to make a firm, but soft dough. Turn out onto a floured surface and knead about 8 minutes. Place in greased bowl and cover with a towel and allow to rise about one hour. Place 1/4 c. margarine, 1/2 cup brown sugar and corn syrup in small saucepan. Heat to melt margarine. Pour mixture into greased 13x9" baking pan, or 2 8" round cake pans. Roll dough out to about 1/4" thickness into a rectangle. Spread 1/2 cup softened margarine over dough. Sprinkle with brown sugar, white sugar and cinnamon. Roll up, from the short side. Pinch seam together. Slice about 3/4" thick. Place in prepared pans. Cover and let rise about 1 hour. Bake 400* about 12-15 minutes. Turn out on aluminum foil. Scrape all the gook out of the pan and drip on cinnamon rolls. 


NOTES : To slice the cinnamon rolls before baking, cut a piece of sewing thread. Place the thread under the long roll and pull both ends together. It will make a clean cut and not squish the roll.

Doughnuts



Use recipe for Out Of This World Rolls. When dough is chilled, roll out to 1/2" thickness. Cut with a doughnut cutter. Let stand about 10 minutes. Fry in hot oil until golden brown, turn and fry on other side. Remove from oil and drain on paper towels. Roll in cinnamon sugar, or your favorite glaze or chocolate icing.

French Bread


1/4 cup warm water
1 package yeast
1 cup water
1 Tablespoon sugar
1 teaspoon salt
2 Tablespoons shortening
3 -4 cups all-purpose flour
cornmeal
1/4 cup margarine -- melted
parsley, Italian seasoning, garlic powder
grated cheese

Dissolve yeast in ¼ cup warm water. Place 1 c. water, sugar, salt and shortening in microwave bowl. Microwave 1 minute to soften shortening. Stir in enough flour to make a soft sticky dough. Stir every 10 minutes for 1 hour. Turn dough out on surface sprinkled with cornmeal. Roll out into a rectangle, about 1 ½" thick. With a pizza cutter, make 2 cuts into dough, lengthwise. Braid the three strips together. Place on greased baking sheet. Let rise 30 minutes. Bake 30 minutes at 400 degrees. About 5 minutes before it is done, drizzle melted margarine & seasonings over the top. Sprinkle with grated cheese. Bake the remaining 5 minutes. Let cool slightly before cutting and serving.

French Rolls 

 

Mix up a batch of dough using the French Bread recipe.  Let stand in mixing

bowl, stirring every 10 minutes for 1 hour.  Turn dough out onto floured cutting board.

Roll out, about 1/2 inch thick.  Cut with a biscuit cutter.  Roll each circle.

Place on greased baking sheet.  Allow to rise 30 minutes.  Bake 400 degrees 12-15 minutes.  Remove from oven and butter tops.

Out Of This World Rolls


1/4 cup lukewarm water
2 packages dry yeast
1 cup warm milk
1/2 cup shortening
1 1/2 teaspoons salt
1/2 cup sugar
2 eggs
4 cups flour 

Dissolve yeast in water. Mix eggs, sugar, shortening, salt and milk. Beat in 2 cups flour. Mix well. Add yeast mixture. Stir in enough remaining flour to make a soft, sticky dough. (The dough will be a little stickier that a regular dough) Do not knead. Cover with a towel and let rise about 1 hour. Punch down. Cover and refrigerate overnight or until thoroughly chilled. About 2 hours before serving, roll dough out on a floured surface to about 1/2" thick. Cut rolls. Placed on greased baking sheets. Let rise 2 hours. Bake 400 degrees 10-12 minutes. Makes 30 rolls.

Parker House Rolls

 

 

Out of this World Roll dough

Margarine

 

 

Mix dough according to directions.  Knead a few minutes.  Cover and let rise 1 hour.  Punch down.  Cover with plastic wrap and place in the refrigerator.

Roll dough out to about ½ inch thick.  Butter dough.  Cut into circles.  Fold each circle in half and place on greased baking sheet.  Let rise at least 3 hours.  Bake 400 degrees for 10 minutes.

Spoon Rolls

 

 

2 c. warm water

1 pkg. yeast

1/3 c. sugar

3/4 c. melted margarine

1 egg

4 c. self-rising flour

 

 

Dissolve yeast in warm water.  Add remaining ingredients.  Grease muffin tins.  Fill ½ full.  Bake 425 degrees 15-20 minutes.  Dough can be refrigerated several days.

 

if you don't have self rising flour,

use plain flour + 2 tsp. baking powder & 1/8 tsp. salt per cup

Wheat and White Rolls


1 cup milk
1 teaspoon salt
1/4 cup brown sugar
1/4 cup shortening
1 egg
1 1/2 cups whole wheat flour
2 cups plain flour
1 package yeast
1/4 cup warm water
pinch of sugar

Dissolve yeast in 1/4 cup warm water. Add a pinch of sugar. Set aside. Place milk, salt, sugar and shortening in a mixing bowl. Microwave for 1 1/2 minutes. Mix in whole wheat flour. Mix in egg. Mix in dissolved yeast. Stir in enough plain flour to make a soft sticky dough. Turn dough out on a floured surface and knead for about 5 minutes. Cover with a towel and let rise about an hour. Punch dough down. Shape into balls and place in 2 greased round cake pans. Cover and let rise. Bake 400 degrees 12-15 minutes.
